nasi goreng

1 cup cooked rice (preferably overnight)
2 large eggs
400g raw shrimps, shell removed
Salt according to taste
6 tablespoons cooking oil
3 cloves of finely chopped garlic
1 onion, finely chopped
2 red chilies, seed removed and sliced finely
1 teaspoon coriander seeds
1/2 teaspoon sugar
200g finely sliced steak
2 teaspoons sweet soy sauce
1 tablespoons soy sauce or according to taste
4 finely chopped onions
Cooking Method :Beat the eggs in a bowl until foamy. Add a little salt according to taste. Using a wok or frying pan, heat it up and coat it with a little cooking oil to avoid the food from sticking while cooking. Make an omelet by using a quater of the earlier mixed eggs. Ensure that both sides are evenly cooked. Repeat the process for another 3 times until all the egg mixtures have been used. Then cut the cooked eggs into strips for placing at the top of the nasi goreng later.
Use a food processor to process the onion, chili, garlic, sugar and coriander until it became a thick paste.
Heat up a wok or frying pan and add in 2 tablespoons of cooking oil. Then saute the processed paste and cooked until it is fragrant. Add the meat and raw shrimps. Cook for another few minutes until the color changes. Finally add in the cooked rice and add more cooking oil if necessary. Add all the sauces, scallions and continue frying for another 30~60 seconds, until it is fragrant.
Scope from the work into a plate and add the strips of omelet at the top to garnish. Serve while hot.

mee siam

Add

250 g Beansprouts
100 g Chinese chives
500 g Small prawns
2 c Fried tofu (about 2 cups,
5 tb Oil
1 lg Onion, sliced
250 ml Water
2 tb Tamarind powder
4 Hardboiled eggs, sliced
REMPAH
5 tb Dried prawns (pounded
5 lg Onions
4 Cloves garlic
6 Candlenuts (or subst,
20 Dried chillies
2 tb Belacan (prawn paste)
1 ts Sugar
1 ts Salt
GRAVY
2 l Water
4 tb Tamarind powder
3 tb Fried rempah (see method)
2 tb Preserved, fermented soy
2 ts Sugar
1/4 Coconut, grated
150 ml Water

Preparation

This dish originates in Thailand, hence, the name Mee Siam, however, it is pronounced "Mee Seeyam". It is one of the local favorites in Singapore. Source: Terry Tans Straits Chinese Cookbook Cooking time: 25 minutes Basic Preparation of Ingredients: Boil a large kettle of water and scald vermi- celli for 10 minutes, longer if necessary to soften until strands are pliable and soft to the touch. Wash and remove the root ends of the beansprouts. Cut chives into 4 cm lengths. Wash and drain. Wash and peel prawns. Sambal: Heat 5 tablespoons oil and fry pounded dried prawns for 3 minutes. Add all other rempah ingredients except sugar and salt and fry until oil seeps out again. Add sugar and salt and stir once. Remove about half the amount of rempah and put aside. In remaining rempah, add sliced onion and fry for 2 minutes. Add prawns and tamarind liquid and simmer for five minutes. Remove and set aside. How to Fry Vermicelli: Putting all but 3 tablespoons of the reserved rempah in a wok or large frying pan, fry vermicelli and bean- sprouts for 8-10 minutes, stirring all the time until cooked. Moisten occasionally with tamarind liquid from the gravy allow- ance if vermicelli gets dry during frying. Add about 3 tablespoons of fried tofu pieces and half the chives to this fried vermicelli. Dish up and arrange on a large plate with sliced hardboiled eggs, remaining chives and remaining soybean pieces for garnish. Gravy: Bring tamarind liquid to a boil. Put all ingre- dients in. Adjust seasoning to suit your taste. Serve Mee Siam with sambal prawns and as much gravy as each person wants from a gravy boat. caption

oatsmeal raisin cookies


Makes about 5 dozen
  • 3 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 2 tablespoons all-purpose flour
  • 1/2 cup toasted wheat germ
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon coarse salt
  • 1 cup (2 sticks) unsalted butter, softened  same as 226.81 gram
  • 1 cup granulated sugar
  • 1 cup packed light-brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups raisins

Directions

  1. Preheat oven to 350 degrees. Stir together oats, flour, wheat germ, baking soda, baking powder, cinnamon, and salt in a large bowl; set aside. Put butter and sugars in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy, about 5 minutes. Mix in eggs and vanilla. Reduce speed to low. Add oat mixture; mix until just combined. Mix in raisins.
  2. Using a 1 1/2-inch ice cream scoop, drop dough onto baking sheets lined with parchment paper, spacing 2 inches apart. Flatten slightly.
  3. Bake until golden and just set, about 14 minutes. Let cool on sheets on wire racks 5 minutes. Transfer cookies to racks using a spatula; let cool completely. Cookies can be stored in airtight containers at room temperature up to 3 days.

Coconut Bonbons

 

 

o Make Coconut Bonbons, You Will Need:

  • 1/2 cup light corn syrup
  • 12 large marshmallows
  • 2-1/2 cups shredded sweetened coconut
  • 1 tsp vanilla extract
  • 1 tsp coconut extract
  • 12 ounces (about 2 cups) chopped semi-sweet chocolate

Mix Ingredients in Large Bowl

Start by placing the marshmallows and corn syrup in a large microwave-safe bowl. Microwave in 30-second intervals until the marshmallows are melted, for about a minute. Stir until they're smooth. Add the vanilla extract, the coconut extract, and the shredded coconut, and stir until it's all well mixed together.

Chill Ingredients

Cover the bowl with cling wrap, and place it in the refrigerator to chill for at least an hour. If you want to speed up the process you can put it in the freezer for about 30 minutes. While the coconut mixture is chilling, get the chocolate ready.

Melt the Chocolate

Melt the chopped chocolate in the microwave, stirring after every 30 seconds to prevent overheating. Stir until it is melted and entirely smooth.

Form Chilled Candy into Balls

Once the candy has chilled and is firm enough to hold its shape, start forming it into balls using a candy scoop or a teaspoon. I usually scoop it all into rough shapes before I worry about making them perfect round balls.


Once it's all scooped, wet your hands and roll the coconut mixture between your palms to make nice round balls. If they seem soft still, refrigerate them or freeze them briefly just until they're firm enough to dip.

Dip Bonbons into Chocolate

To dip the bonbons, drop one in the melted chocolate and use a fork to remove it, tapping the fork against the bowl to remove excess chocolate. Set it on a foil-lined baking sheet and repeat with the other bonbons. If you want, you can sprinkle extra coconut on top while the chocolate is still wet.

    1. BAHAN-BAHANNYA :-)
    250 g mentega
    3 biji telur gred A
    1 1/2 cawan tepung naik sendiri (self-raising flour)
    3/4 cawan gula halus
    1/2 cawan susu segar (mat guna susu cair)
    1/2 camca besar esen vanilla
    Kepingan badam*
    Strawberry jem*(*optional)

    CARA MEMBUATNYA :-)
    1. Panaskan oven pada suhu 180C. Atur paper cup dalam tin muffin atau gunakan muffin cup jenis keras. Putar mentega dengan gula hingga putih, masukkan telur satu persatu sambil terus memutar hingga kembang.
    2. Perlahankan speed, masukkan tepung berselang seli dengan susu, hingga habis. Masukkan esen vanilla dan kacau rata. Sudukan 3/4 penuh dalam paper cup atau muffin cup tadi. Tabur badam dan bakar 25 minit atau hingga kuning keemasan.
    3. UNTUK STRAWBERRY MUFFIN :- Sudukan 1/2 camca teh strawberry jem (kalau dapat jem yang kurang gula), taburkan badan keping dan bakar hingga masak. Sejukkan atas jaringan sepenuhnya sebelum dihidang...

    fruit chocolate

    bingka roti

    BAHAN-BAHANNYA :-)
    3 biji telur gred A
    150 g gula kastor
    100 g mentega, dicairkan
    1/2 camca teh garam
    300 g roti putih, didadu
    200 g tepung gandum
    1 liter santan (atau 500 ml santan + 500 ml susu cair)
    200 g jangung krim dalam tin

    CARA MEMBUATNYA :-)
    1. Dalam satu bekas, satukan telur dan gula, kacau hingga larut. Tambah mentega dan masukkan tepung dan garam, kacau rata. Tuang santan dan kacau hingga semua sebati.
    2. Masukkan roti tadi dan biar terendam selama 15 - 20 minit. Masukkan jagung krim, kacau hingga rata dan tuang dalam acuan kuih bingka yang telah disapu mentega dan alas dasarnya dengan kertas minyak.
    3. Bakar dalam oven pada suhu 180C, selama 1 jam atau pun hingga masak. Biarkan kuih betul2 sejuk sebelum dikeluarkan dari tin dan dipotong..

    jeruk mangga dan kedondong

    . Mula-mula, cuci bersih buah-buahan yang nak dijeruk tu (tak kiralah buah apapun yang sesuai..). Kemudian, belah ikut suka, nak buang biji ke tak buangpun ikut suka. Rendam dalam air garam semalaman (air jgn letak banyak, sekadar tenggelam buah cukuplah). Sukatan garam terpulang, tapi lebihkan pun takpe sebab nanti nak buang airnya. Keesokannya buang air garam, bilas buah dan toskan. Masukkan buah dalam bekas yang berpenutup. Masak air gula, sukatan gula juga ikut citarasa masing2. Tuang air gula dalam bekas yg berisi buah tadi. Simpan semalaman, esoknya dah boleh makan.

    sotong masam manis


    BAHAN UNTUK SOTONG SWEET SOUR :-)
    500 g sotong, cuci bersih dan potong (kalau sotong kecik, tak payah kerat)
    1 biji bawang besar. dihiris
    2 ulas bawang putih, dihiris
    1 inci halia, dihiris
    1 biji cili merah, dihiris
    1 biji cili hijau, dihiris
    Sedikit garam jika perlu
    1/2 camca besar sos tiram
    1 paket rempah sweet sour jenama "Maggi"*
    1/2 cawan air*(*dibancuh dan kacau rata)

    CARA MEMBUATNYA :-)
    1. Panaskan sedikit minyak, tumis bawang besar, bawang putih dan halia hingga harum, masukkan sos tiram, kacau dan masukkan sotong serta hirisan cili merah/hijau tadi. Tuang rempah sweet sour yang telah dibancuh tadi. Kacau rata.
    2. Masak 5 minit dan cedok keluar sotong tadi dan letak dalam bekas sesuai. Kuah yang tertinggal dalam kuali tadi dimasak dengan api perlahan hingga pekat dan kemudian curah atas sotong. Hias dengan hirisan daun bawang sebelum dihidangkan segera.

    3/4in yeast
    2mark air suam.225gm
    (air suam. 1 mark campurkan dengan yest)
    4 sudu besar mentega
    4 sudu besar susu pekat
    2 biji telor
    1 sudu eno
    1 sudu kexil garam.

    cara-

    mentega, telor, susu dipukul.
    masokan air gaul rata.
    masokan garam gaul.
    masokan eno dan gaul.
    masokan tepong.
    adon sapeti doh.
    biarkan 10 miit. canai dan terap.
    bila naik goreng.

    ikan gulai

    simple - bahan2nya - bawang besar (1), bawang putih (3), fresh chillies and bird's eye chillies (cili padi) - ikut citarasa pedas, sedikit belacan, kunyit serbuk- 1 sudu makan), sebatang serai (di titik), sedikit gula.

    Blend bawang,bawang putih, lada dan belacan. Tumiskan. Dah wangi masukkan serai. Selepas itu masukkan air asam jawa yg (ikut citarasa nak pekat atau cair - tapi cair lagi sedap)

    Oh ya tumis dgn kunyit juga.

    Ikan selar kuning kena dgn masakan ini.

    Boleh tambahkan terung atau bendi. anak2 akak suka kalau akak taruk tahu lembik.

    Bubuhkan gula ikut citarasa

    semur ikan tongkol



    Bahan2nya: Ikan tongkol, bawang besar (2 biji), bawang putih (4 ulas), lada kering (ikut citarasa pedas), ketumbar (1 sudu teh), jintan kasar (1 sudu teh), jintan halus (1 sudu teh). 4 sekawan - kayu manis, bunga lawang, pengaga, cengkih.

    Kisar bawang, bawang putih, lada kering, ketumbar dan jintan.

    Oh ya bahan yg penting - kicap masin

    Ikan tongkol mesti di goreng dulu.

    Additional ingredients - large onion (1) sliced round, tomatoes (2) cut into wedges - add them to the semur for garnishing.

    Stir fry the blended ingredients till fragrant, add the 4 spices. Pour in the soya sauce according to yr preference - either a thick gravy or diluted. Add in the tuna (nama glamer) and lastly the sliced onions and tomatoes.

    Oysterilla Noodles

    "Oysterilla Noodles:
    1. Boil water with sliced carrots, mushroom N just a little bit of salt.
    2. Add in sliced sausages N sliced fishcake or fishballs. Bring to boil.
    3. Stir in oyster sauce and add cornflour mix to thicken.
    4.Soak N strain noodles.
    5. Place in bowl, pour the gravy sprinkle pepper, celery & fried onion.
    Vola all done N ready to serve. Enjoy . . . smile . . ."

    roti hotdog

    1 adunan asas roti, resipi boleh lihat di sini....
    14 batang sosej ayamas, rebus 2 minit, toskan dan biar sejuk
    Telur (guna baki telur dalam resipi)*
    1/2 camca besar susu sejat*(*disatukan dan kacau rata)
    Bijan untuk hiasan


    CARA MEMBUATNYA :-)
    1. Canai doh roti tadi dalam bentuk empat segi tepat, kemudian potong kepada 14 bahagian (dalam gambar tu mat potong 10 jee...), ambik 1 bahagian dan lilitkan pada sosej, pasti kan punca doh tadi berada dibawah lilitan pertama, ini utk mengelakkan doh terbuka. Lilit hingga ke hujung dan selit kan bawah lilitan terdahulu. Kemaskan dan susuh dalam dulang pembakar yang telah disapu sedikit mentega. Buat hingga siap.
    2. Biar 45 minit hingga naik. Sementara itu panaskan oven pada suhu 190C sekurang2nya 10 minit. Sapu roti tadi dengan bancuhan telur + susu cair dan tabur dengan bijan. Bakar roti 25 minit atau hingga peerang keemasan. Sejukkan atas jaringan sepenuhnya sebelum dihidangkan....

    Ditumbuk atau kisar:
    3 biji bawang merah
    3 biji bawang putih
    1cm kunyit hidup atau 2 camca teh serbuk kunyit
    2 cm halia
    2 camca teh garam

    Dikisar kering:
    2 sudu makan ketumbar biji
    1 camca teh jintan manis
    1 camca teh jintan putih

    10 keping kepak ayam

    CARA-CARA:

    1. Gaulkan semua bahan-bahan yang telah ditumbuk dan dikisar dengan kepak ayam. Perap seketika dalam 10minit.
    2. Panaskan minyak untuk menggoreng. Goreng sehingga garing. Siap untuk dihidang.

    Bahanya:
    400gm fries/Wedges
    200gm shredded cheddar cheese "Emborg" brand-yg warna orange
    1 sudu besar butter
    1 sudu besar tepung
    50 ml susu
    2 sudu besar sour cream
    sikit Mayonis

    Caranya:
    Guna pot non stick..cairkan butter dan masukkan tepung..gaul sebati kemudian masukkan susu dan dikacau hingga pekat .
    Masukkan cheese..kacau hingga cheese cair...kemudian masukkan sour cream kacau seati dan siap..
    Goreng fries/wedges..toskan..masuk dlm pinggan taburkan sos cheese da sedikit mayonis..

    kari ikan tongkol



    Ingredients
    ikan tongkol, cut into pieces.
    2 tomatoes saya tak guna kelapa kalau nak pakai fresh milk jer lah buat penganti kelapa
    1 1/2 cup water
    1 tsp tamarind paste (assam)
    curry leaves
    Salt
    rempah kari sebarang brand
    1 medium onion
    2 cloves garlic
    4 shallots
    6 fresh red chillies
    4 dried chillies
    1/2" knob ginger
    lady finger

    Method
    1.Dissolve tamarind paste in a little hot water, then discard pulp and seeds.

    2. mix rempah curry with water until become paste. Cut off green portion of lemon grass stalks, and bruise stalks.

    3. Heat 2 tbsp oil in a pan over high heat till hot.


    4. Add curry mix and tomatoes saute for 5 minutes until fragrant and oil separates.

    5. Add in coriander, cumin, fennel, tumeric, chilli powder, and fry for a further 3 minutes. Put in bruised lemon grass stalks.

    6. Add in 100 ml coconut milk, 1 tbsp at a time. After each tbsp, fry coconut milk for about a minute till oil separates.

    7. Add in ikan tongkol, frying ikan tongkol in the spices for 3 minutes.

    8. Add in remaining coconut milk and water. Lower heat and simmer for 30 minutes.

    9. Add in lady finger, simmer till soft.

    10. Adjust salt, aji no moto to taste. Add tamarind water to desired level of tartness.

    500g high protein flour (tepong roti]
    25g milk powder
    75g sugar (I lessen it to just 50g since I want to make sausage rolls)
    10g instant yeast
    1 teaspoon bread softener {ku tambahkan sedikit emplex{improver}for bread}
    1 egg
    1/2 teaspoon salt
    some cheese
    Ingredient B :

    250ml water
    75g margarine

    Ingredient C :

    Red bean filling
    Butter
    Sugar
    Sausage
    Raisins/sultanas

    Method :

    1. Mix well ingredients A.
    2. Add in water and knead till a soft dough is formed.(I called upon my antique but still reliable mixer to help me with this process!)
    3. Add in margarine and knead again till soft and elastic.
    4. Divide the dough into 50g balls.
    5. Shape the dough to your liking.and put some cheese ontop as u like
    6. Leave to prove till double the size. akhir sekali untok hiasan ku taborkan bread crumb sebelom masok di dlm oven
    7. Bake in a preheated oven at 180 degree celcius till golden brown.[ ku pakai 12minit 2000degree celcius]
    8. Once out of the oven, brush some margarine on top.

    tart nanas


    Bahan-Bahan:
    250gm Butter SCS
    2 sudu besar susu pekat manis F&N
    1 sudu besar minyak sapi ghee
    sedikit garam halus
    2 biji kuning telur
    1 biji putih telur
    sedikit vanillin


    500gm tepung gandum (atau kurangkan sedikit untuk kelembutan)
    sedikit baking powder
    4 biji nenas muda
    2 ½ senduk gula pasir
    sedikit vanilla
    sejuring limau nipis
    daun pandan
    Cara:
    Pukul bersama butter, susu, minyak sapi, garam hingga sebati. Masukan telur dan vanillin pukul lagi akhir sekali masukkan tepung yang telah diayak bersama baking powder. Gaul hingga sebati dan lembut.
    Jem Nenas:
    Parut nenas dan jangan dibuang airnya. Masak bersama daun pandan hingga kering sambil dikacau supaya tidak hangus. Setelah kering masukan gula, vanilla dan limau nipis. Kacau tanpa henti hingga likat.
